Since some people asked for the recipe, here it is!
Zucchini and Tomatoes With Cheese
INGREDIENTS:
• 4 small zucchini
• 2 large tomatoes
• 1/2 cup finely chopped onion
• 3 cloves garlic, finely minced
• 1/2 teaspoon salt
• 1/2 teaspoon dried leaf basil
• 1/8 teaspoon black pepper
• 3 tablespoons olive oil
• 8 ounces fontina cheese, shredded
• 1/4 cup shredded Parmesan cheese
Feel free to use Mozzarella cheese in place of the fontina cheese in this recipe. i have done so and tastes very good.
PREPARATION:
Heat oven to 350°. Grease a 2 1/2 to 3-quart baking dish.
Cut ends from zucchini and cut in 1/2-inch rounds. Cut cores from tomatoes and slice about 1/2-inch thick. Cut each slice into quarters.
Combine the zucchini and tomatoes; sprinkle with the onion, garlic, salt, basil, and pepper. Toss to blend; drizzle with the olive oil and toss again to coat the vegetables. Turn the vegetables into the prepared baking dish. Bake for 25 minutes. Top with cheese and continue baking for 10 to 15 minutes longer.

Friday i decided it was time to get back to exercise, and after lunch i drove to Manresa ( a big city near here), and before that i thought 'shit this car is so dirty lets go and wash it', so i made a stop in the shopping area and washed my car in a tunel. Then drove to the gym, i havent been there in that long that didnt even recall my pin access code!, oh well, ive thought i probably couldnt swim more than 20 minutes non stop, but hei i did! i swam during 45 minutes before i putthe food for the first time to the floor. It felt great swimming again, and from now on i'll go 4x a week or so.
Friday evening was a quite evening, i stayed in watching the ring on tv and filling slams.
Yesterday i went out with vane, and it was big fun, we went for dinner to the rita, and ate a lot as usual, and we had exquiside beligian chocolate as a desert huh, then to the irish pub that was crowded because there was some football going on, we had some blokes talking to us but we werent much interested, then to the pipa club, and Enzo ( Vane has a hugeeee crush on him) talked aabout all kind of stuff, this man is so weird, he even been on holiday to MOLDAVA! oh well!!, there was a sweet guy looking to us the whole time, and i pretty much liked him, but i didnt feel like going talking as he was with other people...so when he went to the bar area, vane went there and wrote him my number in a paper....i wish he calls, but i dont think he will....oh well, off to Zürich( with vane!) today x
